Who knew such a thing existed, but today, Friday 9th October 2020 is World Egg Day a celebration of the humble breakfast staple, beloved of bakers everywhere.
To recognise the day, we asked our team of exceptional Executive Head Chefs what their preferred egg recipe was and the list includes everything from home comforts with a twist, to recipes you may want to try at home. It’s all very egg-citing!

Spanish style Baked eggs piperade.
Sautéed chorizo, red onion, and roast red pepper chopped parsley cracked eggs on top and bake in the oven for 4 mins.
Hrvoje Loncarevic – Executive Head Chef, The Grand Hotel, Eastbourne
My favorited egg its got to be Scrambled egg with fresh chilli’s and spring onion just perfect to kick start the day!
Mike Lloyd – Executive Head Chef, Tylney Hall Hotel
Scrambled duck eggs with grated black truffle, finished with a touch of double cream, shallots, chives, and shaved truffle all over it.
Served on sourdough toast.

My Favourite ways to eat eggs are, Egg Clouds
Separate the yolks and the whites, whisk up the white with a pinch of salt to soft peaks, spoon the whites onto a non-stick tray, make a small well for the egg yolk to sit in
Finley grated parmesan over the top and bake at 180C for 10 minutes they are just amazing…!!!
